<p><br>每逢3月14日白色情人節，是想要告白的女生們，表達愛意最佳時刻。不過，有營養師就提醒，愛他就要幫他顧健康，選擇巧克力時，記得要閱讀食品標籤、商品名稱，並且選擇熱量及含糖量較低的巧克力。</p>



<p>台北慈濟醫院營養師楊灼華指出，收到巧克力時雖感到甜蜜，但是巧克力在製作過程中會添加糖、油脂或其他食品添加物，市售的巧克力多屬於高熱量、高糖或高脂肪食物，對健康有影響，這點在選擇時需要特別注意。</p>



<p>楊灼華表示，但是巧克力也有著一些營養成分。巧克力是由可可豆經過發酵、曝曬、烘烤、去皮磨碎後製成可可膏，若特別提取可可的油脂，則稱為可可脂，可可脂雖然是油脂，但含有抗氧化物、類黃酮，所以可可脂含量越高的巧克力抗氧化物質越多。</p>



<p>常見的巧克力百分比代表所含的可可成分比例，可可的成分包括可可粉、可可脂、可可固形物跟非脂可可固形物等等，100％的巧克力，不一定百分之百都是可可脂，楊灼華說明：「巧克力的百分比不等於巧克力的健康程度，只能代表可可在成分中的含量。」</p>

<p>目前市售巧克力大致分成黑巧克力、白巧克力及牛奶巧克力三種，若以相同重量來看，黑巧克力的可可脂成分較高，熱量最高，但營養成分卻多於其他兩者，至於白巧克力跟牛奶巧克力，因為有添加物，熱量雖較低但較影響健康。</p>



<p>楊灼華並提醒，巧克力相對於其他的糖果、餅乾，雖然多了抗氧化物、類黃酮，但巧克力含有大量的磷，患有慢性腎臟病、透析的民眾，為避免造成腎臟的負擔，不宜食用。此外，攝取過多飽和脂肪、糖，不僅會造成肥胖與蛀牙，也會增加心血管疾病風險，若想當零食或是點心吃，必須控制份量，減少負擔。</p>



<p>市售巧克力若植物油含量超過總重的5％則無法命名為「巧克力」，民眾在選用巧克力時應以黑巧克力為主，且注意商品標示是否有「巧克力風味」或是連「巧克力」三個字都沒有。選對巧克力，就可以不怕健康危害，安心吃，甜蜜少負擔！</p>
