<p>儘管台灣拳擊好手林郁婷在2024巴黎奧運繳出亮眼成績，但擂台下卻飽受來自國際拳總、川普、JK羅琳的指責及刁難。他們認為，林郁婷及阿爾及利亞選手Imane Khelif，2023年都因染色體檢測結果為「XY」被國際拳擊協會（IBA）取消世界錦標賽資格。</p>



<p>然而此次爭議事件也在國內醫學界引起討論，染色體「XY」一定是男性，「XX」一定是女性嗎？<a href="https://heho.com.tw/archives/336124">HEHO健康</a>特別專訪遺傳學專家一次解答。</p>

<h2 class="wp-block-heading">X、Y染色體不是決定「性別」的唯一因素</h2>



<p>XY一定是男性，XX一定是女性嗎？那可不一定。遺傳諮詢專家、馬偕兒童醫院資深主治醫師林炫沛表示，性別的決定絕非僅是XX與XY那般單純、簡易，尚有許多參與決定的基因及環境因素運作其間。也正因為如此，胚胎發育的前10周沒有人可以預測胎兒的「性別」。</p>



<p>林炫沛解釋，參與性別決定的基因有20幾個，在分化的過程中，XY 染色體只是決定胎兒性別的重要因素之一，並不是唯一的因素。因為在細胞分化過程中胚胎會受到基因、環境的影響，因而產生變異，但絕大多數會發展成帶有XX染色體的女性或<a>XY</a>染色體的男性。</p>



<h2 class="wp-block-heading">性別分化異常 雖少見但也不罕見</h2>



<p>但也有例外，少部分人因為胚胎發育期出現性分化異常（ Differences in Sexual Development，簡稱DSD）又稱性別發育異常、性發展障礙，因而出現帶有XY染色體的女性或是XX染色體的男性。林炫沛臨床偶爾也會遇到有XX染色體的新生兒，還帶有一點點的Y染色體。</p>



<p>根據統計，目前全世界每5500個人類嬰兒中，就有約1個嬰兒，出生時發生與性別有關的問題，其中一些嬰兒具有男性染色體但沒有睾丸。很多患者是到了青春期，或是成年後因不孕困擾，進一步檢查，才知道自己也是DSD的一員。</p>



<h2 class="wp-block-heading">為什麼會造成DSD？與這「3大」原因有關</h2>



<p>之所以會發生這些令人驚訝，無所適從的現象，可能有三種原因：</p>



<p>1、胚胎時期睾丸發育不全，這些個案也是可以有子宮的。</p>



<p>2、雖然睾丸正常，但是合成男性荷爾蒙的酵素缺乏，無法分泌足夠的男性荷爾蒙。</p>



<p>3、男性荷爾蒙分泌正常，但是細胞受體發生突變，無法接受荷爾蒙刺激，形成男性荷爾蒙無法作用，表現不出男性化的特徵。</p>



<p>但無論如何，他們的生殖器外觀都可以是女性的表現，從小也會被當作女性來扶養，經過臨床醫師的診斷，個案在與家長及醫療團隊共同商談後，仍然接受自己是女性的認同。也就是說，這些個案雖然染色體是XY，也不會因為這樣的染色體要求病患要進行變性。</p>



<h2 class="wp-block-heading">研究：Sox9基因蛋白是「性別分化」的關鍵</h2>



<p>值得注意的是，2018年Science刊登一項基因研究，指出XY染色體攜帶者，在胚胎發育一開始也全都是女性，之所以能分化成男性，完全仰仗Sox9基因蛋白引導XY染色體攜帶者的睪丸發育。</p>



<p>如果Sox9基因蛋白沒有表達，就算是XY染色體攜帶者，也還是會發育成雌性。這種染色體上是雄性，但實際個體是女性的情況，被稱為「性別分化異常」。比利時模特兒Hanne Gaby Odiele，就是「性別分化異常」的一個例子。</p>



<p>事實上，這種「明明是XY染色體，出生後表現的性別是女性，或不表現男性性別」的患者數量不少，也越來越引起社會關注。</p>

<h2 class="wp-block-heading">為何睪丸發育不全還可以有子宮？</h2>



<p>至於為什麼胚胎時期睪丸發育不全還可以有子宮？蔡立平解釋，胚胎的睪丸除了分泌男性荷爾蒙外，還會分泌抗穆勒氏管荷爾蒙 (Anti-Müllerian hormone，AMH)，以消除日後會發育為子宮的穆勒氏管。</p>



<p>如果睪丸發育不全，AMH 就無法正常分泌，穆勒氏管就會形成子宮，同時也沒有分泌足夠的男性荷爾蒙，就沒有正常的男性內外生殖器。這也是為什麼運動競技場上，很多女性運動員雖然染色體是XY，但還是有子宮的原因。</p>

<p>「投資健康」是賴清德總統上任後的首要任務，以 119 年降低癌症死亡人數 1/3 為具體目標，並提出「百億癌症新藥基金」的構想，作為政策之一。但，「百億癌症新藥基金」財源該從那裡來呢？且看<a href="https://heho.com.tw/archives/335924">HEHO健康</a>的分析報導。</p>

<h2 class="wp-block-heading">新財源從哪來？石崇良提「酒品健康福利捐」</h2>



<p>賴總統當選後，即承諾將設置「百億癌症新藥基金」，而衛福部規畫 3 年內逐步在健保內編列預算，專用於癌症新藥暫時性支付。但隨著國內推行菸害防制法與相關教育有成，使得菸捐逐年衰退，已讓台灣社會福利財源出現嚴重缺口。</p>



<p>為此，日前健保署署長石崇良拋出可以開徵「酒品健康福利捐」的想法，其根據《財政紀律法》說明，癌症新藥基金需有既有收入、國庫撥補以外的財源，而《健保法》有個未開徵的「酒捐」，或許可成為新財源，為「健康台灣」政策注入活水。</p>



<p>根據台灣癌症基金會調查，立委認為最可行的基金財源，包括菸及新興菸品捐（69％）、公害汙染相關基金撥補（65％）、酒捐（42％）、糖捐（41％）。但石崇良認為，菸捐屬既有收入，糖捐定義模糊，而公害汙染相關基金稅收有限，因此必須開拓其他財源作為投資健康之用。</p>



<p>為此，台灣公共衛生學會、台灣外傷醫學會、台灣成癮學會、台灣酒害防治協會、台灣酒精不耐症衞教協會、台灣精神流行病學會、台灣精神醫學會、台灣臨床心理學會和台灣酒駕防制社會關懷協會等團體共同發表聲明表示，開徵酒捐以降低酒害是極為有效的策略，樂見政府推展酒捐。</p>

<h2 class="wp-block-heading">酒精是一級致癌物，喝酒對健康危害大</h2>



<p>已有許多研究證實，課徵酒捐或酒稅可以降低酒害，降低酒稅則會帶來健康危害。例如，芬蘭曾經把酒稅降低 32%，結果每人每年平均飲酒量增加 0.5 升，3 年後酒精性肝病變上升 46%，酒精相關的死亡也上升 31%。</p>



<p>根據世界衛生組織（WHO）資料顯示，酒精是一級致癌物，長期飲酒會增加罹患<a href="https://cancer.heho.com.tw/archives/category/cancer_encyclopedia/%e8%aa%8d%e8%ad%98%e7%99%8c%e7%97%87/colorectal-cancer" target="_blank" rel="noreferrer noopener">大腸癌</a>、<a href="https://cancer.heho.com.tw/archives/category/cancer_encyclopedia/%e8%aa%8d%e8%ad%98%e7%99%8c%e7%97%87/gastric-cancer" target="_blank" rel="noreferrer noopener">胃癌</a>、<a href="https://cancer.heho.com.tw/archives/category/cancer_encyclopedia/%e8%aa%8d%e8%ad%98%e7%99%8c%e7%97%87/skin-cancer" target="_blank" rel="noreferrer noopener">食道癌</a>、口腔癌和乳癌等風險。此外，也較容易產生社會問題，包括酒駕、暴力事件、自殺、工作意外事故、酒精成癮等。</p>



<p>開徵「酒捐」到底行不行呢？在酒駕肇事奪走無辜生命意外頻傳，引發社會公憤，為此，法務部及朝野立委紛紛提出修法加重酒駕刑責。不過，預防勝於治療，如能從飲酒源頭做防堵，進一步使人遠離酒品危害發生，成效可能更佳。</p>



<h2 class="wp-block-heading">效法國際「酒害防制策略」，酒捐酒稅怎麼抽</h2>



<p>據世界衛生組織（WHO）調查，全球大約 1/3 的國家對於酒品採取以價制量策略。其「酒害防制策略」是透過酒捐或酒稅、加強酒癮戒治服務、監督酒類產銷流程、查緝私劣酒、酒瓶加註健康警語等完整策略。</p>



<p>各國對酒捐或酒稅的徵收作法不一，可依酒精濃度、種類或價格，採取酒稅內含或額外徵收；酒捐的用途，有用於衛教、健康醫療或教育經費等。除了早已開徵酒稅的法、德、泰、韓等，英國自 2023 年 8 月 1 日起也開始徵收酒稅。</p>



<p>據財政部統計處資料，2023 年酒品稅收約為 259 億元，但就衛福部統計，酒品對健康危害帶來的經濟損失則高達至少 534 億元，遠遠超過酒品稅收的總額，且這個損失是由全民買單。</p>

<h2 class="wp-block-heading">課徵酒捐酒稅可望降低酒品消費，挹注財政</h2>



<p>因此，台灣若能課徵酒捐或酒稅，除了可以價制量、降低酒品消費，且不失為穩定、龐大的國家財政來源，對社會福利支持也有重大貢獻。有專家學者就以現行菸稅及菸捐的比例試算，預計 1 年可為基金帶來 160 億的收入。</p>



<p>眾專家均建議，規畫課徵酒品健康捐，可參考菸害防制成功經驗。2009 年調高菸品健康捐後，菸銷售量與吸菸率在 1 年內皆下降約一成，估計有 33 萬人戒菸，節撙健保支出約 10 億元，更別說戒菸對個人健康與社會功能提升之益處。</p>



<p>隨著醫藥進步，癌症精準治療所需之新藥和新技術日新月異，其費用也相當驚人。因此，對於「百億癌症新藥基金」的財源，除了酒捐之外，菸捐、糖捐、檳榔捐、污染稅等都是可納入討論的。</p>



<h2 class="wp-block-heading">「百億菸捐稅」說法非正確，無助於挹注癌症新藥基金</h2>



<p>尤其是，近期新興菸品「加熱菸」進入審查階段，讓加熱菸通過可帶來的稅收多寡備受討論，甚至有「百億菸捐稅」的說法。事實上，台灣對加熱菸的課稅僅與傳統紙菸一樣的低，加熱菸每包課菸捐 20 元、菸稅 31.8 元。</p>



<p>拒菸聯盟表示，若以 5% 吸菸人口使用加熱菸估算，估計將有 15 萬人每天消耗 15 萬包加熱菸，1 年的加熱菸菸稅 17.4 億、菸捐則不到 11 億，對於支持「百億癌症新藥基金」可說是杯水車薪。</p>



<p>加上菸捐、菸稅早已應用於全民健保之安全準備、癌症防治、提升醫療品質、補助醫療資源缺乏地區、罕見疾病等醫療費用，以及經濟困難者之保險費、菸害防制、衛生保健、社會福利、私劣菸品查緝、挹注長照基金等。</p>



<p>而民眾對於開徵酒捐、酒稅也是樂見其成，當議題拋出後，批踢踢眾網友同聲叫好。「贊成！菸酒對健康損害大還會酒駕」、「我覺得很好啊，檳榔、菸、酒最好都抽」、「贊成！抽個 10000% 也沒差！反正酒這玩意就只會害人害己」。</p>

<p>坊間月餅由來的故事不少，在民間有一種說法竟和楊貴妃有關，某年農曆八月十五那天，楊貴妃和唐玄宗李隆基一起賞月，桌上有著各種糕餅點心，楊貴妃拿起其中一個帶餡的圓餅嘗了一口，覺得非常好吃，問此餅何名，結果沒人能說出名字，唐玄宗便讓貴妃起一個名字，自此有了專為賞月時吃的「月餅」。</p>



<p>另有一說，在元朝末年，傳劉伯溫命人在餅子裡塞入「八月十五夜起義」的紙條，派人分頭送到各地起義軍中，朱元璋自此得了天下；之後明太祖(朱元璋)傳下口諭，在即將來臨的八月十五，將當年起兵時秘密傳遞信息的「月餅」作為節令糕點賞賜群臣，中秋節吃月餅的習俗，也開始在民間流傳開來。</p>



<p>在月圓之際品嘗一塊月餅，真的是人生一大美事。又因為各地口味不同，也因此衍生出不同製作手法、特色口感等月餅種類。對於香港老饕來說，可謂對月餅最了解也最挑的一族，他們所重視的傳統月餅分有多款，其中「廣式雙黃白蓮蓉月餅」 ，更可說是月餅界的起源，承載了許多人無限記憶與懷念。</p>



<p>關於廣式雙黃白蓮蓉月餅，要回溯至1889年，城西一家糕餅店以蓮子熬成蓮蓉做酥餅餡料，清香可口、大受歡迎。宣統二年，翰林學士陳太吉品嚐後大為讚賞，遂賜名「蓮香樓」。</p>

<p>每到中秋時節，市面上的月餅總是琳瑯滿目，對於這些看得眼花撩亂、很想咬一口的好吃糕餅，到底有什麼不一樣，分有甚麼種類嗎？</p>



<h5 class="wp-block-heading" id="h-廣式月餅"><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-vivid-cyan-blue-color"><strong>廣式月餅</strong></mark></h5>



<p>在月餅表面總有不同的圖案花紋玲瓏浮凸，皮薄、餡豐，表面呈現金黃色，餡料用上椰絲、橄欖仁、蜜橘餅、鹹蛋等等；嘗起來口味滋潤柔軟、味美香醇。後來，還有港人接連創出奶黃、冰皮等新款式月餅。</p>



<h5 class="wp-block-heading" id="h-蘇式月餅"><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-vivid-cyan-blue-color"><strong>蘇式月餅</strong></mark></h5>



<p>比起鬆軟的廣式月餅，外酥裡鬆的蘇式月餅別有一番風味，餡料上較清新、不肥膩。宋朝文學家蘇東坡曾以「小餅如嚼月，中有酥和飴」的詩句讚譽月餅，這指的也正是蘇式月餅。在製作上，一般使用小麥粉、食用植物油或豬油制酥，經制酥皮、包餡、成型、焙烤工藝加工而成。</p>



<h5 class="wp-block-heading" id="h-潮式月餅"><strong><span class="has-inline-color has-vivid-cyan-blue-color">潮式月餅</span></strong></h5>



<p>由麵粉加上豬油後油炸，外表由一層一層酥皮而成，餡料有鹹有甜，包括芋泥、綠豆蓉等等。潮式月餅主要流行於潮汕、閩南和台灣等閩語區。</p>



<h5 class="wp-block-heading" id="h-京式月餅"><mark style="background-color:rgba(0, 0, 0, 0)" class="has-inline-color has-vivid-cyan-blue-color"><strong>京式月餅</strong></mark></h5>



<p>來自中國北方的月餅，起源於京津及周邊地區，特點是甜度及皮餡比例適中。餡料主要為果仁，並會用上麻油，味道清甜，口感鬆脆。</p>



<p><strong><span class="has-inline-color has-vivid-cyan-blue-color">台式月餅</span></strong></p>



<p>台式月餅結合了廣式、蘇式月餅特色，分有為糕皮、油酥皮兩種餅皮，內餡部分則有點類似廣式月餅的綿密口感，但較為乾爽。</p>



<p>糕皮為單層餅皮，吃起來較厚實，例如鳳梨酥的餅皮就是糕皮。油酥皮所製作的糕點則類似蘇式月餅，酥鬆、由數層構成，像是綠豆椪、蛋黃酥等，它需要經過兩次以上捲迭油酥面皮，還得掌握黃金時機，在水分流失前完成捏制；這款餅皮為表現層次感，需要經過多道繁複的手工秘訣，用水皮包油皮，再反覆捲桿、鬆弛、包餡、整型、低溫烘烤而成。</p>

<p>做工精緻與品質精良的皇玥流心月餅，即使在常溫之下都可以呈現到流心的狀態，但有些人特別偏好吃到熱呼呼的流心月餅，更能感受內餡濃醇的獨特滋味，在此跟大家分享【皇玥流心加熱大法】。</p>



<h4 class="wp-block-heading"><strong><span class="has-inline-color has-vivid-green-cyan-color">Tips1.烤箱加熱</span></strong></h4>



<p>家裡有烤箱的網友們，可以 150 度先預熱，然後將月餅加熱約 2 分鐘可以開心享用啦！至於有人提問，是否可以用微波爐來加熱月餅，一般不建議，因為微波爐加熱較不平均，會影響流心餡的質感。</p>



<h4 class="wp-block-heading"><strong><span class="has-inline-color has-vivid-green-cyan-color">Tips2.平底鍋加熱</span></strong></h4>



<p>如果家裡沒有烤箱者，使用平底鍋加熱也可以。取乾燥無水氣的平底鍋，開細火預熱鍋子 1 分鐘，接著放入月餅加熱 2 分鐘即可。</p>

<p>談起流心奶黃月餅的由來，不得不說到香港奶黃月餅創始人、現為皇玥集團餅藝大師的葉永華。當年他到香港半島酒店嘉麟樓任職的第一年，正好臨近中秋，由於嘉麟樓的炸奶黃包非常受喜愛，市面上奶黃的產品不多，於是葉永華便借鏡西方糕點的製作，以奶黃作餡、牛油做皮，創製出迷你奶黃月餅，也因此成為奶黃月餅的創始人。</p>



<p>葉永華的「迷你奶黃月餅」，受到熱烈好評與歡迎。在第一年，只製作了2000盒給熟客 ; 翌年(1987年)，香港半島酒店正式推出迷你奶黃月餅作銷售，很快便全部售馨。之後他進入皇玥，繼續打造全新的流心月餅系列，包括流心奶黃、流心芝麻月餅等，在2020年又推出薑汁流心、榴槤流心等口味，2021年則是推出帶著清新香氣的綠茶流心月餅。</p>



<p>由葉永華、黎永冠兩位大師合力推出的流心月餅，憑藉出色的工藝，自2019年起，連續三年勇奪「世界食品品質評鑒大獎」(Monde Selection)中勇奪最高級別獎項「最高金獎」，更是全港首個流心月餅獲得這個最高殊榮。</p>

<p>葉永華表示，為了要保持在室溫之下仍有澎湃的流心效果，需要極度嚴格地控制餡料、流心醬、餅皮的比例，以及烘焗的火候及時間。至於完美的流心月餅太流太濃都不理想，如果流心餡太「流」，會容易被其他餡料吸收，且令整個月餅變得過份濕潤，破壞了口感；如果太「濃」會容易凝結，進而讓整塊月餅失去了流心的美味效果。</p>

<p>雖然因為疫情阻礙了人們的正常社交與生活，但是對美食的享受卻未被忽視。今年有多個品牌紛紛推出加入了豪奢食材的中秋月餅，魚子醬、頂級花膠等，都讓人驚艷並且充滿期待。</p>



<p>有香港頂級月餅品牌美譽的皇玥集團，特別推出由葉永華主廚所研發的「皇至尊」頂級月餅系列，加入了極品花膠，即「鮑參翅肚」中的魚肚，入餡製作出「花膠奶黃月餅」，香濃的奶黃餡料中巧妙融合了花膠爽滑口感，可說是味道與奢華兼具。台灣市場只「配」到100盒，在台北復興SOGO快閃店限額選購，才上架幾天已近完售。</p>

<p>前香港半島酒店嘉麟樓點心部主管、現任皇玥首席餅藝大師葉永華師傅，非常擅長製作中式傳統糕餅，並且不斷研發新口味，繼創造了號稱月餅界的勞斯萊斯迷你奶黃月餅、流心月餅系列，2021年他又首創出全手工製作的花膠奶黃月餅。</p>



<h4 class="wp-block-heading" id="h-製作祕辛一-關於花膠的挑選"><strong><span class="has-inline-color has-vivid-cyan-blue-color">●製作祕辛一：關於花膠的挑選</span></strong></h4>



<p>葉永華所採用的花膠，無論在種類、厚度和色澤的上都有嚴格的要求，他特別挑選了頂級的金錢鳘魚花膠，這又稱為金錢肚或黃魚肚；此種花膠無論在營養價值或口感方面都比較好。</p>



<p>另外，在厚度和色澤方面也極為考究，他精挑出1.5至2厘米厚的花膠，以及一定要挑選金黃色，因為金黃色代表花膠年份比較老且沒有腥味。值得一提的是，葉師傅還特別選擇四分之三為母花膠，四分之一公花膠，因為母花膠煲後易溶解，口感較軟和黏口，適合製作甜品。</p>



<h4 class="wp-block-heading" id="h-製作祕辛二-花膠月餅的研發過程"><strong><span class="has-inline-color has-vivid-cyan-blue-color">●製作祕辛二：花膠月餅的研發過程</span></strong></h4>



<p>對於推出的每一種產品，都會經過不斷的研發製作與改進，希望提供給消費者的是最好的品質。葉永華說，花膠月餅在製作上非常繁複，師傅們首先將花膠乾蒸15分鐘（即是隔水蒸），讓花膠變軟並去除腥味，之後用冰水浸3分鐘，這樣可以增加花膠的柔韌度；接著還要用水浸6小時，再隔水蒸20分鐘。</p>



<p>由於公花膠較結實，不易在烹調時受熱溶化；而母花膠則較厚身，烹調後較易溶入，口感較腍，因此要將花膠公和母分開處理。對於母花膠部分，會將它切碎，融入到奶黃餡之中一起烹煮；花膠膠質豐富，融入奶黃後，會令香味更加突出。</p>



<p>至於公的花膠，則會切粒處理，可以帶來口感，即使放到奶黃餡之中也不會完全融化，令人吃的每一口，都能品嚐到花膠的爽滑口感。</p>

<p>去年在香港搶購一空的魚子醬月餅，在台灣也可以買到了，Royal Caviar Club今年正式進駐台灣，在中秋節推出時髦又精緻的「皇家奢華魚子醬月餅禮盒」，每顆月餅中加入多達6克鱘魚子醬，這對於吃膩了傳統月餅的人來說，誘惑指數百分百。</p>

<p>魚子醬、松露及鵝肝被譽為世界三大珍品。Royal Caviar Club創建者、也是魚子醬專家的奧克珊娜‧佐根(Oxana Dragun)女士，為尋找最高品質的魚子醬，與全球頂尖的鱘魚養殖場合作，使用俄羅斯及伊朗的傳統永續環保養殖技術，純手工製作出一粒粒純天然不含防腐劑、矜貴優質的海中鑽石-魚子醬。</p>



<p>香港「Royal Caviar Club」的魚子醬和香檳主要供應給五星級奢華酒店及米其林餐廳，去年首度於香港推出品牌獨創的中秋「魚子醬月餅」。在國際知名法籍甜點主廚Gaël Majchrzak精心設計下，每個月餅皆使用多達6克—具有獨特清甜爽脆、蘊含堅果香氣，帶有橄欖綠及棕色色澤的黃寶石奧斯特拉Ossetra鱘魚子醬。</p>

<p>香港皇玥的中秋月餅，每一年都教人驚艷。多年來，它始終堅持著傳統製餅工序、選用頂級材料傳統，就是想要讓消費者在中秋佳節時，能夠品嘗到那一口道地港式流心奶黃的好滋味；而今年在餡料的的研發上，除了經典流心奶黃、芝麻口味，還特別製作流心綠茶系列，以及讓你想吃又不怕胖的低糖系列月餅。</p>



<p>皇玥集團餅藝大師的葉永華師傅很喜歡飲茶，而且有研究茶葉的習慣，這也讓他想去嘗試把茶和月餅結合在一起，期待可以將創新和傳統合二為一。葉師傅特別精心挑選了頂級日本京都綠茶，經過隔水加熱後萃取其精華放入月餅當中；而在綠茶餡料方面，他也是反覆調配，將茶香和奶油香巧妙結合，去掉綠茶的清澀，同時不會讓甜味蓋過了回甘茶香，在常溫底下也一樣湧流的綠茶流心醬，口感倍感絲滑，咬開月餅時，即刻散發出濃郁甘甜的綠茶香氣，層次細緻清新，茶香醇厚。</p>

<p>由於現代人追求健康飲食，皇玥集團的兩位大師傅今年也在月餅配方上做研究，力求改變一般清淡無味的低糖產品定律，他們將餡料和餅皮採用嶄新的食材配方，加上獨特的烘焗製法，讓月餅在低糖之下，仍能保持經典奶黃月餅般的軟滑口感和奶油幽香，做到了和市面上所見低糖月餅所不同的獨特口感。這款讓葉永華花了兩年時間研發，全新推出的低糖迷你奶黃月餅，每一件月餅的糖份降低至3%以下，絕對是愛健康人士的福音。</p>



<p>葉永華表示，坊間大多數低糖月餅只是純粹減少點糖，月餅不但變得淡而無味，更會影響口感；而皇玥希望做到低糖之餘，味道、口感都可以兼顧到，也因此花費了比其他月餅更長的研發時間。經過上百次的研究和改良配方，皇玥低糖月餅的所有食材比例都特別調配過，連烘焗的時間和火喉也都反覆調整。令月餅做到低糖之餘還有軟滑口感和牛油幽香，與經典奶黃月餅一樣美味。</p>
